Oatmeal Crunchies

Family-sized Batch)

Mix ONLY by hand - do not use a mixer!

5 ¼ C. flour
2 1/2 C. white sugar
2 1/2 C. brown sugar
5 tsp baking powder
2 1/2 tsp salt,
2 1/2 tsp soda,
1 Tbl. powdered vanilla
5 ½ C. quick oats.

Mix 5 eggs with 5 tsp vanilla - mix well with fork.
Add 4 sticks butter (or half shortening) - softened.
Mix all together using wooden spoon or pastry
blender. Stir in chocolate chips as you desire.

Chill dough 1 hr. or so, form into
good-sized balls & dip the tops in sugar.

Bake 8 - 10 min @ 375 deg. on lightly greased sheets. Cool on a clean counter, not racks!
